Salmon on a bed of onions News

  Salmon on a bed of onions  Simple and delicious 

   2 fillet of salmon
   3 onions thinly sliced
   3 garlic cloves sliced 3 tbsp olive oil
   2 tbsp. lemon juice
   1 tbsp capers
   Salt and lemon pepper to taste

   In an ovenproof pan place the onions and garlic, season lightly with salt and lemon pepper.

   Place fish skin side down on top of the onions.
   Mix oil and lemon well and pour over fish.
   Season fish with salt and lemon pepper

   Add the capers. Bake in a preheated oven for 20-25 min. at 375.

   I like to make a sauce with the same elements and pour over cooked fish.

   Do not over bake fish it loses it's moisture and becomes hard.

  The natural sweetness of the onions complement the fish and also fish doesn't stick to the pan.
