Quince preserves

4 Quinces
1 cup water
1 Tsp vanilla
Juice of ½ lemon
Sugar ¾ of a cup less than your diced Quinces
1 cup almonds-skin removed and cut in half

Peel the Quinces and dice in very small pieces, while dicing place in lemon water to prevent oxidation.

Measure Quinces, place in a heavy pot with the water and bring to boil.

Simmer gently for a few minutes, add the sugar vanilla lemon juice and continue cooking in moderate heat, when  the color of the mixture becomes golden try a tsp on a cold plate, if the syrup  becomes thick  it is ready, now add the almonds   and remove from the heat.

Let cool.

Transfer to airtight containers, and refrigerate.

Litsa's Tip
Quinces range from green to bright yellow and remain quite firm when ripe. Choose fruits that bear no trace of green.
