Pork roast with potatoes Comfort food

2 lbs pork for roast
4-5 garlic cloves
1 tbsp garlic powder
½ cup olive oil ¼ cup apple cider vinegar
2 tbsp prepared mustard
10 potatoes cut in thick wedges
Salt and pepper to taste
1 ½ cups water
Season meat very well with salt, pepper and garlic powder. 
Place in deep pan and broil to give it color and seal the juices.
In a bowl combine your potatoes and rest of the ingredients except water and oil, mix well.Place potatoes all around meat add the water and oil, cover and cook at 350 for 11/2-2 hours.
Optional
You can add 3-4 dry figs to compliment your roast but no more than that it becomes very sweet.
A nice green salad goes well with this meal.
