Grilled vegetable salad 

 Healthy Greek food

1 large eggplant sliced
2 zucchini sliced about 1 inch
1 large red pepper cut in 2 and seeded
1 large onion sliced

Place all vegetables in a large bowl season with salt, pepper and add a little olive oil. Mix well so that the vegetables are coated with oil. BBQ a few minutes on each side on medium heat.
Make a nice vinaigrette, with olive oil, balsamic vinegar and a little dry oregano.

Place your vegetables in a nice platter and add the vinaigrette. Finish with feta crumbs and you have an amazing summer salad.
