Greek orzo Salad


Greek orzo salad

2 Cups orzo cooked al dente (orzo has to be 100 % semolina for best results )
½ red pepper diced
½ yellow pepper diced
1 small cucumber seeded and diced
1 cup cherry tomato’s cut in 2
1 cup carrots diced
1 small can artichoke hearts cut in 4
1 cup Greek feta cheese in pieces
½ cup Kalamata olives pitted
2 cloves garlic chopped
3 green onions thinly sliced
¼ cup olive oil
4 tbsp balsamic vinegar

Cook orzo in salted water with a little oil.
Drain and place in a large bowl.
Add all the ingredients and mix well together.
Taste and adjust seasonings according to your taste.

This salad is a meal on its own and very healthy with all the nice mix of vegetables.

It is actually a fun salad to make and you can modify it according to your available ingredients
