Cubanelle peppers a great Meze in Greek cooking

They are a sweet variety of peppers, light yellowish-green in color, but will turn bright red if allowed to ripen.

Thinner flesh is longer and it has a slightly more wrinkled appearance.

This a very simple way to make the Cubanelle peppers but a very nice addition to a meal.

Olive oil for frying

¼ cup red wine vinegar

Salt and a touch of garlic powder

In a heavy frying pan add olive oil and lightly fry the peppers turning them a couple of times. About 5-6 minutes

When done add salt, garlic powder and wine vinegar, continue cooking another minute and they are ready to serve.
