Salmon on a bed of onions Simple and delicious
- Ingredients
- fillet of Salmon
- 5 onions thinly sliced
- 3 garlic cloves sliced
- 1/4 cup olive oil
- 2 tbsp. lemon juice
- 1 tbsp capers
- olives
Season Salmon with salt,pepper and garlic salt
In an ovenproof pan place the onions and garlic, season lightly with salt and pepper.
Place Salmon skin side down on top of the onions.
Mix oil and lemon well and pour over fish.
Add the capers and olives. Bake in a preheated oven for 15-20 min. at 325
I like to make a sauce with the same elements and pour over cooked Salmon,that means olive oil,lemon juice and oregano,mix well and have available!
Do not over bake Salmon it loses it’s moisture and becomes dry
The natural sweetness of the onions complement the Salmon and it also helps that fish doesn’t stick to the pan.
