Quince preserves Traditional Greek preserves ( Gliko tou koutaliou )
- Ingredients
- 4 Quinces
- 1 cup water
- 1 Tsp vanilla
- Juice of ½ lemon
- Sugar ¾ of a cup less than your diced Quinces
- 1 cup almonds-skin removed and cut in half
Peel the Quinces and dice them into very small pieces, while cutting the fruit, place in lemon water to prevent oxidation.
Measure cut up Quinces, place in a heavy pot with the water and bring to boil.
Simmer gently for a few minutes, add the sugar vanilla lemon juice and continue cooking over moderate heat, when the color of the quinces becomes golden, try a tsp on a cold plate, if the syrup becomes thick it is ready. Now add the almonds and remove from the heat. Let it cool.
Transfer to airtight glass containers, and refrigerate.

Quinces range from green to bright yellow and remain quite firm when ripe. Choose fruits that bear no trace of green.
Measuring the fruit gives you the idea of how much sugar to use.If you have 4 cups of cut up fruit use 3 1/4 cups sugar.
