What are Kourabiethes?
Kourabiethes are (butter cookies with icing sugar)A Greek favorite. The cookie that melts in your mouth.
Easy to make, the only thing to remember is that good quality butter is a must for the best Kourabiethes and no substitutions will do if you are looking for perfection…
Also, the recipe makes enough Kourabiethes, with one little detail in mind…. You have to share the goodness, you have to share the love!
- Ingredients
- 2 cups good-quality unsalted Butter (room temperature)
- ½ cup Icing sugar
- 1 Egg
- 2 tsp. Vanilla
- 2 tsp Baking powder
- 1 cup Almonds (blanched roasted and coarsely chopped)
- 5 cups Flour
- Icing sugar for dusting
Place butter in mixing bowl and with mixer at high-speed beat butter with icing sugar for 10 minutes.
Add egg and continue beating for another 5 minutes.
Add the rest of the ingredients except flour and mix well.
Change the mixer and use the paddle to work with the flour.
Slowly add the flour a cup at a time, checking the mixture.
The mixture has to be soft and easy to handle.
Form small round balls, lightly indented with the thumb, and bake at 350 20-25 min. The recipe is for 35-40 pieces.
When done, and while warm, put the icing sugar in a flat container, and gently place the cookies on top. Dust icing sugar over cookies to cover them completely.
When cold place on a beautiful platter and enjoy your ”Kourabiethes”.
Dusting the Kourabiethes is very easily done by placing icing sugar in a small fine strainer and by shaking it gently over the Kourabiethes you dust them with icing sugar, covering them completely.
Kourabiethes are easy and children-friendly. This recipe is perfect to do with children, the dough is so nice and soft, they have so much fun playing and at the same time learning!
