Kagianas Or Strapatsada, A summer delight, done with ripe, juicy tomatoes and eggs!

Kagianas, a summer recipe when the tomatoes are plenty and delicious, especially if you get them right off the vine! A secure method to make, and it is a traditional Greek little delight!

  • Here is what you will need for the traditional Greek Kagianas or Strapatsada!
  • Ingredients
  • 5 tomatoes, skin removed and grated
  • 4 eggs lightly beaten
  • 1 tbsp butter and a little olive oil
  • Salt and pepper
  • ½ tsp sugar
  • Feta cheese optional

In a heavy frying pan, add tomatoes and cook until all the juices evaporate.

Add butter and oil, eggs, and seasonings!

Cook, until you have a nice thick consistency!

Your Kagianas is ready to be enjoyed with good bread.

Olives and Feta cheese go very well together, with kagianas!

 

Litsa’s tip, To remove the skin from the tomato, immerse the tomato in hot water for a few minutes, but if the tomatoes are sweet and ripe, you will have no difficulty in removing it!
