Greek Fig Jam

Fig trees are so generous! When the time comes to harvest this sweet little fruit, they are so many that you don’t know what to do with them, and you make fig jam! It’s so good on a piece of toast with a good cup of coffee! Add some when you are making Pork when you have a  wine and cheese party, perfect with Brie, so many ways to enjoy Fig Jam! I wish I lived in a country with all kinds of trees on my property year-round!

  • Ingredients
  • 1 cup figs
  • 1 cup of sugar
  • 3 tbsp lemon juice
  • ¼ tsp cloves, ¼ tsp cinnamon, ½ tsp vanilla

I like to peel my ripe figs and cut them in 4

Place the figs in a heavy pot with the sugar and the lemon

Simmer the figs in moderate heat for about 15 min.stirring from time to time, add the cloves, cinnamon, and vanilla.

Continue cooking for 5 more minutes.

If froth develops remove with a spoon for a more transparent jam.

Put a small plate in the freezer part of your refrigerator for a few minutes, so you can test the consistency of the fig jam…You will be able to see fast how thick you want your jam to be if it is too thin, cook a few more minutes.

Put your jars in the dishwasher for a wash and they are ready to use…

You will keep your fig jam in your fridge and it will keep well for 4-5 months…But I am sure it will not last that long

I envy in a good way people with fig trees; they will have so much pleasure from their tree…If they know what to do… But today we have the information we want at our fingertips, no excuses!

P.S Don’t be afraid to double or make the recipe bigger! If your figs are very sweet just add 1/2 a cup of sugar!
