Meatless Monday can be such a joy if we plan and we are ready. Here is a fresh idea, Greek Briami-Delicious vegetarian recipe!
Briami, a medley of seasonal vegetables cooked with tomatoes and olive oil, served over Orzo. A delicious meal, or a side for a pork chop, chicken, and any protein! Greek Briami-Delicious vegetarian recipe! So easy!
A great addition to a gathering, because it goes a long way!
Ingredients
- 3 small eggplants
- 3 zucchini
- 1 red pepper
- 4 potatoes
- 2 tomatoes
- 3 cloves garlic
- 1 large onion
- 1 small bunch of parsley
- 1 bunch green onions
- ½ cup olive oil
- ½ cup prepared tomato sauce
- ½ cup of water
- 1/4 cup apple cider vinegar
- Salt, pepper, oregano, and a touch of sugar
- Here is how to cook the Greek Briami!
Wash the vegetables well and cut them into medium size pieces.
Please place them in an ovenproof pan, and season them well.
Place oil, tomato sauce, and water in a bowl mix well, and pour over vegetables.
Bake for 30 minutes at 350
Be careful not to overcook the vegetables!
Greek people tend to overcook their vegetables, something that I don’t like to do!
Serve over hot orzo, cooked al dente!
